Buona, an Italian beef institution based in Berwyn, announced on Tuesday that it will open restaurants outside of the Chicago and Northwest Indiana area as part of a new franchise program.

According to the press release, the family business plans to open 100 franchise stores over the next five years in Florida, Texas, Colorado, Tennessee, Arizona and other locations in the Midwest.

“Our family has been in business since 1981. And we’ve worked really hard as a family and in our extended family to build a textbook that is truly built for growth, ”said Joe Buonavolanto III, vice president of franchise operations.

The first Buona was opened in Berwyn in 1981; the company currently has 25 locations in the Chicago and Northwest Indiana area and one limited-menu kiosk in Denver. On Tuesday, the company said it plans to open three company-owned stores each year over the next five years, including locations in northwest Indiana, southern Wisconsin and potentially southern Illinois.

The expansion states were chosen because they are either a high-growth market or they have a lot of Chicago transplants, Buonavolanto said. The company is already in talks with operators looking to open restaurants in Florida, Texas and Arizona, he said.

“The interest we have received so far comes from experienced operators looking to build the entire territory,” said Buonavolanto.

Buon franchisees will have the option to add an original Rainbow Cone ice cream kiosk in their restaurant, the company said. The company first partnered with the Beverly Ice Cream Core Pillar in 2018 and opened its first dual concept restaurant in Darien last summer.

Since then, dual-concept restaurants have been opened in Skokie, Lakemoor and Mount Prospect, with locations in Valparaiso and Lincolnshire scheduled to open around next year.

The collaboration with the nearly 100-year-old ice cream shop has been a success so far, said Buonavolanto.

“We’ve even seen a 30% increase in lunch sales in those locations that have Rainbow Cone,” he said.

Buona’s expansion comes at a time when demand for Italian beef grows outside of Chicago following the premiere of “The Bear,” a smash hit by FX which takes place amid the drama of the family-run beef store, River North Italian.

But Buonavolanto says the TV show wasn’t a catalyst for Buona’s expansion outside of Chicago: the company set up a franchise team about a year ago, he said.

Known for both hot dogs and Italian beef, Portillo’s based in Oak Brook is also expanding outside of the Chicago area – into some of the same states where Buona plans to enter.

Portillo’s opened a restaurant in St. Petersburg, Florida in the second quarter and plans to open additional venues in Florida, Texas and Arizona by the end of the year, CEO Michael Osanloo said during the August results call.
